Ingredients
- 2 1/2 medium chicken breastsNutrition
- 3 tbsps olive oilNutrition
- 1 cup green beansNutrition
- 3 cups chopped broccoliNutrition
- 2 cups shredded Nappa cabbageNutrition
- 1 large carrotNutrition
- 3 cups cauliflowerNutrition
- 2 stalks medium celeryNutrition
- 2 cloves garlicNutrition
- 2 tsps fresh gingerNutrition
- 1 large onionNutrition
- 1 medium green pepperNutrition
- 1 cayenne seedsNutrition
- 1 large yellow pepperNutrition
- 1/2 cup waterNutrition
- 3 tbsps low sodium soy sauceNutrition
- 1 tbsp honeyNutrition
Directions
- 1Cut up chicken into strips or cubes, brown in 2 tablespoons of extra virgin olive oil.
- 2Add chopped or pressed garlic and ginger.
- 3At the same time heat 1 tablespoon of extra virgin olive oil in wok and add all chopped vegetables.
- 4When chicken is browned add 1/2 cup of water to pan - stir.
- 5When fully cooked, add to vegetables and serve over rice or quinoa.
