  1. 1Cut up chicken into strips or cubes, brown in 2 tablespoons of extra virgin olive oil.
  2. 2Add chopped or pressed garlic and ginger.
  3. 3At the same time heat 1 tablespoon of extra virgin olive oil in wok and add all chopped vegetables.
  4. 4When chicken is browned add 1/2 cup of water to pan - stir.
  5. 5When fully cooked, add to vegetables and serve over rice or quinoa.
