Ginger Soy Scallops
Bay scallops with ginger soy sauce served over brown rice.

Ingredients
- 1 tbsp extra virgin olive oilNutrition
- 1 tbsp cooking oil sprayNutrition
- 3 tsps garlic, mincedNutrition
- 1 tsp gingerNutrition
- 4 medium scallions, cut into 1" piecesNutrition
- 10 sprigs parsley, choppedNutrition
- 2 tsps soy sauceNutrition
- 3 cups cooked brown riceNutrition
- 4 tbsps vegetable oil-butter spread, reduced calorieNutrition
- 1 tsp white cooking wineNutrition
- 1 lb bay scallopsNutrition
Directions
- 1Spray a 12" saucepan with any cooking spray of your choice, butter, and olive oil.
- 2Sauté garlic for about 2 minutes on medium low heat.
- 3Add scallops and sauté for about 3 minutes, or until brown on all sides.
- 4Add all other ingredients except brown rice.
- 5Sauté all ingredients for about 3 more minutes.
- 6Add salt and pepper to taste.
