  1. 1Spray a 12" saucepan with any cooking spray of your choice, butter, and olive oil.
  2. 2Sauté garlic for about 2 minutes on medium low heat.
  3. 3Add scallops and sauté for about 3 minutes, or until brown on all sides.
  4. 4Add all other ingredients except brown rice.
  5. 5Sauté all ingredients for about 3 more minutes.
  6. 6Add salt and pepper to taste.
