Turmeric Ginger Chicken Saute

  1. 1Heat oil in a large non-stick skillet over medium-high heat.
  2. 2Add bell peppers and sauté 1 minute.
  3. 3Add onion and sauté 1 minute.
  4. 4Reduce heat to medium; stir in cabbage, ginger, and garlic. Cook for 3 minutes, stirring constantly.
  5. 5Add chicken and remaining ingredients except for spinach. Cook 5 minutes stirring frequently.
  6. 6Stir in drained spinach and reduce heat to low. Cook 10 minutes or until chicken is done.
  7. 7Note: based on recipe from Cooking Light magazine.
