Samosa Pea Soup

Ingredients
- 1 tbsp vegetable oilNutrition
- 1 tbsp mild curry pasteNutrition
- 1/2 tsp fennel seed, crackedNutrition
- 1 tsp turmericNutrition
- 6 cups chicken stockNutrition
- 2 tsps garlic, choppedNutrition
- 2 tsps ginger, gratedNutrition
- 1 1/2 cups onion, choppedNutrition
- 1 cup peas and carrotsNutrition
- 1 cup yellow split peas, rinsedNutrition
Directions
- 1Heat vegetable oil in a pot over medium heat. Add onions and saute for 4 minutes or until softened.
- 2Add ginger, garlic, curry paste and fennel seeds and saute for 1 minute or until fragrant.
- 3Add split peas and saute another minute, then add stock and turmeric and bring to a boil. Simmer gently over low heat for 1 hour or until split peas are soft.
- 4Transfer soup to a blender or use a stick blender and process until smooth. Add peas and carrots. Reheat when needed.
