  1. 1Heat vegetable oil in a pot over medium heat. Add onions and saute for 4 minutes or until softened.
  2. 2Add ginger, garlic, curry paste and fennel seeds and saute for 1 minute or until fragrant.
  3. 3Add split peas and saute another minute, then add stock and turmeric and bring to a boil. Simmer gently over low heat for 1 hour or until split peas are soft.
  4. 4Transfer soup to a blender or use a stick blender and process until smooth. Add peas and carrots. Reheat when needed.
