Southern Style Black Eyed Peas
A great way to spice up black eyed peas.

Directions
- 1Pre-heat oven to 400 °F (200 °C).
- 2Sauté onion in olive oil until clear.
- 3Add chopped collard greens and cook just until the greens begin to wilt.
- 4Add chicken stock, cover and bring to medium simmer. Cook about 10 minutes.
- 5Add black eyed peas, cover and continue to simmer until all liquid has evaporated.
- 6Add mixture to baking dish, sprinkle top with bread crumbs and cheese.
- 7Cook for 15 minutes until top is golden.
- 8Note: you may also use the broiler for faster browning.
