  1. 1Preheat oven to 350 °F (175 °C). Lightly spray the bottom of a 9x12 glass baking dish.
  2. 2In a bowl mix parmesan and Italian seasoning.
  3. 3Roll chicken in parmesan to coat and place pieces in one layer on bottom of baking dish.
  4. 4Saute onions in butter for 1 minute. Add flour, stir.
  5. 5Over medium heat add milk stirring with whisk to blend evenly. Continue stirring until sauce thickens slightly. Add spinach and blend thoroughly.
  6. 6Spread spinach mixture in a layer over the chicken. Top with remaining parmesan.
  7. 7Bake for 35-45 minutes until top begins to brown.
  8. 8Remove from oven, let sit 5 minutes, before serving.
