Chicken Parmesan Florentine

- 1Preheat oven to 350 °F (175 °C). Lightly spray the bottom of a 9x12 glass baking dish.
- 2In a bowl mix parmesan and Italian seasoning.
- 3Roll chicken in parmesan to coat and place pieces in one layer on bottom of baking dish.
- 4Saute onions in butter for 1 minute. Add flour, stir.
- 5Over medium heat add milk stirring with whisk to blend evenly. Continue stirring until sauce thickens slightly. Add spinach and blend thoroughly.
- 6Spread spinach mixture in a layer over the chicken. Top with remaining parmesan.
- 7Bake for 35-45 minutes until top begins to brown.
- 8Remove from oven, let sit 5 minutes, before serving.
