Quinoa Cauliflower Buffalo Bites

  1. 1Spray pan with cooking spray and cook chicken. Add some black pepper and salt to taste.
  2. 2Add cauliflower and cook until it softens.
  3. 3Add already cooked quinoa, until mixture fits your preferences.
  4. 4Transfer mixture to a large mixing bowl. Break egg in separate bowl or cup and mix with fork until yolk is broken up.
  5. 5Add egg, cheese, buffalo sauce and some breadcrumbs and mix. Add more breadcrumbs as needed until consistency is not runny, and you are able to scoop.
  6. 6Spray muffin tin with cooking spray and scoop mixture into cups. Cups should be about half filled.
  7. 7Bake for 20 minutes until quinoa is crispy on bottom, but not burnt. Let cool a couple of minutes before serving.
  8. 8Tastes great with non-fat Greek yogurt sauce mixed with dill and honey.
