Quinoa Cauliflower Buffalo Bites

- 1Spray pan with cooking spray and cook chicken. Add some black pepper and salt to taste.
- 2Add cauliflower and cook until it softens.
- 3Add already cooked quinoa, until mixture fits your preferences.
- 4Transfer mixture to a large mixing bowl. Break egg in separate bowl or cup and mix with fork until yolk is broken up.
- 5Add egg, cheese, buffalo sauce and some breadcrumbs and mix. Add more breadcrumbs as needed until consistency is not runny, and you are able to scoop.
- 6Spray muffin tin with cooking spray and scoop mixture into cups. Cups should be about half filled.
- 7Bake for 20 minutes until quinoa is crispy on bottom, but not burnt. Let cool a couple of minutes before serving.
- 8Tastes great with non-fat Greek yogurt sauce mixed with dill and honey.
