Low fat chunky fried potatoes make for the perfect comfort side dish.

  1. 1Wash and slice potatoes into 1/4" slices.
  2. 2Spray non-stick skillet with cooking spray like Pam, and pre-heat briefly. Do not allow to brown or smoke, just a few seconds.
  3. 3Place potatoes and onion in pan, add salt and pepper, spray top lightly with cooking spray and cover with lid.
  4. 4Cook on medium to medium-low heat until browned and turn potatoes.
  5. 5Cook 5 minutes longer to brown slightly then add water, replace lid and continue to cook until potatoes are tender and water is evaporated.
  6. 6Spray with buttery spray and serve.
  7. 7Note: green peppers are also good with this recipe.
