  1. 1Peel and cut potatoes and onions into small squares and put into a small non-stick skillet with a tablespoon of extra virgin olive oil.
  2. 2Sprinkle salt and pepper over contents and stir to coat.
  3. 3Cook over medium-high until skillet contents start to sizzle.
  4. 4Turn down to medium-low and cover.
  5. 5Cook covered over med-low heat for about 15 minutes or until potatoes are tender, stirring occasionally.
  6. 6Remove lid, turn up the heat to high and lightly brown them for about half a minute.
