- 1Cut cooked shrimp into about three pieces each. Put them all in a large bowl.
- 2Add the juice of the lemons, oranges, and limes. Add the tomatoes, finely diced, and the onions, finely diced. Stir together. Marinate 4 hours.
- 3Add the cucumbers, finely diced, directly before serving.
- 4Note: adding cilantro adds a nice zing.
