  1. 1In a large pot with a heavy bottom, brown the 95% lean ground beef, remove from pan and set aside on paper towels to drain.
  2. 2Add olive oil to the pan, then add all vegetables, except the canned tomatoes, sweat until crisp tender.
  3. 3Add seasonings, stir and add wine, cook for two minutes, add the remaining ingredients and bring to a simmer.
  4. 4Let cook over low heat for at least an hour, or until the vegetables are fully softened.
  5. 5Adjust seasonings to taste.
