Sweet Potato Stew

Ingredients
- 1 tsp cinnamonNutrition

- 2 tsps leaves oreganoNutrition
- 1/2 tsp paprikaNutrition
- 1/2 tsp pepperNutrition
- 1/2 tsp cayenneNutrition
- 1/2 tsp saltNutrition
- 1 tbsp canola oilNutrition
- 1/3 cup whole cranberriesNutrition
- 4 cloves garlicNutrition
- 2 cups chopped onionNutrition
- 2 medium green peppersNutrition
- 1 lb carrotsNutrition
- 1/2 lb sweet potatoNutrition
- 2 cups waterNutrition
- 1 1/2 tbsps cocoaNutrition
- 14 1/2 oz diced tomatoesNutrition
- 15 oz crushed tomatoNutrition
Directions
- 1Heat oil in very large saucepan.
- 2Add garlic and onions and stir for 2 minutes.
- 3.Add spices and stir for another minute.
- 4Shred carrots. Cut sweet potatoes into chunks. Dice green peppers
- 5Add the vegetables, except for the tomatoes, and stir 1 minute.
- 6Add diced tomatoes, crushed tomatoes, cocoa and cranberries.
- 7Add water, bring to a boil, cover and let simmer for an hour, stirring occasionally.
- 8For the last 15 minutes take off the cover. Enjoy!
