Ingredients
- 2 tbsps ground cuminNutrition
- 4 tsps ground dried oreganoNutrition
- 1 tbsp red chilli powderNutrition
- 2 tsps olive oilNutrition
- 1/4 cup cilantro, choppedNutrition
- 1 1/2 cups chicken brothNutrition
- 6 cloves garlic, crushedNutrition
- 1 medium onion, choppedNutrition
- 1 medium green pepper, dicedNutrition
- 1 can diced tomatoesNutrition
- 1 1/2 cups canned tomato sauceNutrition
- 1 cup corn kernelsNutrition
- 3 cups canned black beansNutrition
Directions
- 1Heat olive oil in a large saucepan.
- 2Sauté onion and bell pepperover medium heat for about 5 minutes stirring frequently until translucent.
- 3Add garlic,cumin, red chili powder and continue to sauté for another minute.
- 4Add broth and rest of ingredients, except cilantro and corn. Simmer for another 20 minutes uncovered.
- 5Add corn and cook for another 2 minutes.
- 6Add chopped cilantro and season with salt and pepper to taste.
