  1. 1Heat olive oil in a large saucepan.
  2. 2Sauté onion and bell pepperover medium heat for about 5 minutes stirring frequently until translucent.
  3. 3Add garlic,cumin, red chili powder and continue to sauté for another minute.
  4. 4Add broth and rest of ingredients, except cilantro and corn. Simmer for another 20 minutes uncovered.
  5. 5Add corn and cook for another 2 minutes.
  6. 6Add chopped cilantro and season with salt and pepper to taste.
