Ingredients
- 2 tbsps chili powderNutrition
- 1 tbsp cuminNutrition
- 3 breasts, bone and skin removed chicken breastNutrition
- 1 can tomato soupNutrition
- 2 tbsps worcestershire sauceNutrition
- 42 oz chicken brothNutrition
- 4 limes yield lime juiceNutrition
- 1/4 cup cilantroNutrition
- 1 tsp garlicNutrition
- 1 cup chopped onionNutrition
- 1 cup kernels cornNutrition
- 1 jalapenoNutrition
- 8 fl oz red wineNutrition
- 20 oz tomatoes and green chiliesNutrition
Directions
- 1In a skillet cook trimmed, boneless, skinless chicken breasts in a little chicken broth along with onion until done.
- 2Empty contents of skillet into soup pot and add rest of chicken broth, tomatoes and chilies, jalapeno (optional), corn, tomato soup, juice from limes, spices, wine, Worcestershire sauce and simmer for 20 minutes.
- 3Add cilantro, heat through and ladle into bowls. Enjoy!
- 4Note: you can add a tablespoon of fat free sour cream for extra deliciousness and also add tortilla chips on top for crunch.
