Seasoned Tomato Soup
A lovely soup during a cold night.

Directions
- 1In a large pot add the olive oil and bring to medium heat. Chop onion and garlic.
- 2Add to pot and sauté in olive oil. Add the basil, oregano, or any Italian spice mix to the pot and mix.
- 3After onion and garlic is sauteéd for about 5 minutes add tomatoes and chicken broth to the pot. Add salt and pepper.
- 4Bring to a boil for about 15 minutes. Turn off the stove and let it cool for about 5 minutes.
- 5After the soup has cooled for a bit, put into a blender or blend (in the pot) with a handmixer till smooth.
- 6Put it back in the pot if you used a blender. Add soy milk if you like it creamy.
- 7Reheat soup till hot and serve.
- 8Note: my son loves this and would suggest his mommy's turkey bacon BLT sandwiches as an accompaniment.
