Ingredients
- 2 bay leavesNutrition
- 1 1/2 tsps pepperNutrition
- 1 1/2 tsps saltNutrition
- 8 breasts, bone and skin removed chickenNutrition
- 2 small carrots, choppedNutrition
- 1/4 cup chopped celeryNutrition
- 2 cloves garlic, mincedNutrition
- 1/3 tbsp parsley, choppedNutrition
- 2 medium potatoes, peeled, choppedNutrition
- 3 medium whole tomatoes, choppedNutrition
- 1 cup waterNutrition
Directions
- 1Remove skin from chicken, along with any extra fat.
- 2In large skillet, combine chicken, water, garlic, onion, salt, pepper, tomatoes and parsley.
- 3Tightly cover and cook over low heat for 25 minutes.
- 4Add celery, potatoes, carrots, and bay leaves and continue to cook for 15 more minutes or until chicken and vegetables are tender.
- 5Remove bay leaves before serving.
