Whole Wheat Pasta Salad

A delicious high fiber, low fat pasta salad with broccoli, cherry tomatoes and olives.

  1. 1Cook whole box of pasta - al dente. Rinse with cool water and drain well.
  2. 2Blanche broccoli till crisp-tender and rinse with cool water, and drain very well.
  3. 3Drain can of medium olives and wash tomatoes.
  4. 4Toss pasta, broccoli, cherry tomatoes, olives and dressing together.
  5. 5Refrigerate for an hour and toss with parmesan cheese. Serve.
  6. 6Note: recipe in honor of the passing of Mr. Paul Newman using Newman's Own light lime vinaigrette.
