- 1Combine white quinoa, red quinoa and 1 1/2 cups of water in a pot. Bring to a boil, reduce heat, cover pot and simmer for 15-20 minutes.
- 2Remove pot from heat and allow quinoa to steam for another 10 minutes. Transfer quinoa to bowl, fluff and cool to room temperature.
- 3Add cranberries, almonds and chopped scallions.
- 4In a separate bowl, make the dressing: rice vinegar, olive oil, maple syrup and salt.
- 5Add dressing to quinoa mixture and mix well.
