Almond Cranberry Maple Quinoa Salad

Ingredients

  1. 1Combine white quinoa, red quinoa and 1 1/2 cups of water in a pot. Bring to a boil, reduce heat, cover pot and simmer for 15-20 minutes.
  2. 2Remove pot from heat and allow quinoa to steam for another 10 minutes. Transfer quinoa to bowl, fluff and cool to room temperature.
  3. 3Add cranberries, almonds and chopped scallions.
  4. 4In a separate bowl, make the dressing: rice vinegar, olive oil, maple syrup and salt.
  5. 5Add dressing to quinoa mixture and mix well.
