- 1Separate egg whites from egg yolks, with whites in a big bowl and yolks in a small bowl.
- 2To the yolks, add and mix all the other ingredients.
- 3Whip the egg whites until soft peaks form.
- 4Fold the almond mixture into the egg whites. Do this gently because the fluffiness of the pancakes is from the whipped egg whites.
- 5Make pancakes using one large tablespoon of batter per pancake.
- 6Pan fry in oil or butter like regular pancakes.
