  1. 1Separate egg whites from egg yolks, with whites in a big bowl and yolks in a small bowl.
  2. 2To the yolks, add and mix all the other ingredients.
  3. 3Whip the egg whites until soft peaks form.
  4. 4Fold the almond mixture into the egg whites. Do this gently because the fluffiness of the pancakes is from the whipped egg whites.
  5. 5Make pancakes using one large tablespoon of batter per pancake.
  6. 6Pan fry in oil or butter like regular pancakes.
