- 1Break eggs into bowl and beat until frothy.
- 2Add cinnamon and a pinch of salt.
- 3Melt butter in medium skillet, pour in egg mixture and cook until just barely set.
- 4Remove from heat and stir in cream cheese that is cut into cubes. Stir until there are ribbons of cream cheese running throughout the mixture.
- 5Separate into servings and top each serving with a little butter and a drizzle of sugar free maple syrup.
