Directions

  1. 1Break eggs into bowl and beat until frothy.
  2. 2Add cinnamon and a pinch of salt.
  3. 3Melt butter in medium skillet, pour in egg mixture and cook until just barely set.
  4. 4Remove from heat and stir in cream cheese that is cut into cubes. Stir until there are ribbons of cream cheese running throughout the mixture.
  5. 5Separate into servings and top each serving with a little butter and a drizzle of sugar free maple syrup.
