Mango Muffins

Ingredients
- 5 large egg whitesNutrition
- 2 tsps cinnamonNutrition
- 1/2 tsp saltNutrition
- 1 tsp vanillaNutrition
- 1 medium bananaNutrition
- 1/2 fl oz lime juiceNutrition
- 2 cups sliced mangoNutrition
- 3/4 cup apple sauceNutrition
- 1 tsp baking powderNutrition
- 2 tsps baking sodaNutrition
- 1/2 cup sugarNutrition
- 1 cup whole wheat flourNutrition
- 1 cup flourNutrition
- 1/2 oz orange juiceNutrition
Directions
- 1In a large bowl, combine the flours, baking powder, baking soda, sugar, cinnamon and salt.
- 2In another bowl, combine the egg whites, apple sauce, lime juice and orange juice; add to the dry ingredients just until moistened.
- 3Stir in the mango, banana and nuts.
- 4Fill paper-lined muffin cups two-thirds full. Bake at 350 °F (175 °C) for 20-25 minutes or until a toothpick comes out clean.
- 5Cool for 5 minutes before removing from pans to wire racks.
