Quinoa Salad with Black Beans

Directions

  1. 1Combine bell peppers, scallions and cilantro in a mixing bowl.
  2. 2Add the red wine vinegar, olive oil, garlic, salt and pepper and stir (add more salt and or pepper to taste).
  3. 3Add the quinoa and stir until everything is well incorporated.
  4. 4Fold in the black beans.
  5. 5Serve immediately or let sit for a bit for the flavors to meld.
  6. 6Note: can serve on a lettuce leaf chilled or at room temperature.
