Quinoa Salad with Black Beans

Ingredients
- 1/4 tsp sea saltNutrition
- 1 cup cilantroNutrition
- 1 1/2 cups black beansNutrition
- 2 tbsps red wine vinegarNutrition
- 2 cups tricolor quinoaNutrition
- 1 1/4 cups bell peppers, chopped (red, orange &/or yellow)Nutrition
- 1/4 tsp black pepperNutrition
- 2 tbsps olive oilNutrition
- 2 cloves minced garlicNutrition
- 1 cup scallions, choppedNutrition
Directions
- 1Combine bell peppers, scallions and cilantro in a mixing bowl.
- 2Add the red wine vinegar, olive oil, garlic, salt and pepper and stir (add more salt and or pepper to taste).
- 3Add the quinoa and stir until everything is well incorporated.
- 4Fold in the black beans.
- 5Serve immediately or let sit for a bit for the flavors to meld.
- 6Note: can serve on a lettuce leaf chilled or at room temperature.
