Directions

  1. 1Saute onion, garlic, celery, and carrots in the olive oil.
  2. 2Add chili powder, paprika, and cumin seeds and cook for a minute, stirring constantly.
  3. 3Add lentils, water and stock and dash of salt and pepper.
  4. 4Bring to a boil, cover, reduce heat and simmer for an hour.
  5. 5Add the spinach and tomatoes and cook for a few minutes.
