Ingredients
- 1/4 cup olive oilNutrition
- 4 cups cherry tomatoesNutrition
- 3 1/4 cups vegetable brothNutrition
- 1 tsp chili powderNutrition
- 2 tsps cumin seedNutrition
- 1 1/2 tsps paprikaNutrition
- 11 medium celery stalksNutrition
- 5 cloves garlicNutrition
- 1 large onionNutrition
- 8 cups waterNutrition
- 12 oz baby carrotsNutrition
- 16 oz lentilsNutrition
- 10 oz spinachNutrition
Directions
- 1Saute onion, garlic, celery, and carrots in the olive oil.
- 2Add chili powder, paprika, and cumin seeds and cook for a minute, stirring constantly.
- 3Add lentils, water and stock and dash of salt and pepper.
- 4Bring to a boil, cover, reduce heat and simmer for an hour.
- 5Add the spinach and tomatoes and cook for a few minutes.
