- 1Peel the boiled eggs once cooled, and mash up in a bowl with a fork. Finely chop the celery stalk and parsley.
- 2Combine all of the ingredients in the bowl with the mashed egg and stir to combine. Season with salt and pepper to taste.
- 3Serve between two slices of bread and additional salad of your choice.
