  1. 1Peel the boiled eggs once cooled, and mash up in a bowl with a fork. Finely chop the celery stalk and parsley.
  2. 2Combine all of the ingredients in the bowl with the mashed egg and stir to combine. Season with salt and pepper to taste.
  3. 3Serve between two slices of bread and additional salad of your choice.
