  1. 1Crack eggs into large bowl and beat. Set aside.
  2. 2Cook sausage until done.
  3. 3Shred sweet potato into "hash browns" and saute with spinach.
  4. 4Add cooked sausage, sweet potato, spinach, salt and pepper to bowl with beaten eggs and mix well.
  5. 5Scoop mixture into greased muffin pan filling cups 3/4 full. Cook until eggs are completely done, approximately 20 minutes.
