  1. 1To prepare chicken, in cup or small bowl combine oil and 1 teaspoon of fresh lime juice; brush chicken breasts with oil mixture.
  2. 2Grill or broil chicken until cooked through and juices run clear.
  3. 3Meanwhile, in medium bowl combine salsa ingredients (watermelon, yellow bell pepper, cilantro, 2 tablespoons fresh lime juice and red onion), mixing well.
  4. 4Place 1 cooked chicken breast on each plate; top each with 1/4 of the salsa.
