- 1To prepare chicken, in cup or small bowl combine oil and 1 teaspoon of fresh lime juice; brush chicken breasts with oil mixture.
- 2Grill or broil chicken until cooked through and juices run clear.
- 3Meanwhile, in medium bowl combine salsa ingredients (watermelon, yellow bell pepper, cilantro, 2 tablespoons fresh lime juice and red onion), mixing well.
- 4Place 1 cooked chicken breast on each plate; top each with 1/4 of the salsa.
