- 1Preheat your skillet over medium-high heat.
- 2Peel and dice the potato.
- 3Add coconut oil to the pan and add potatoes with salt and pepper. Stir every minute or so to get some color on the potatoes
- 4Dice the onion.
- 5When the potatoes have cooked a little on all sides, add the onion and chili powder. Reduce heat to low-medium.
- 6Cook, stirring, until potatoes have a little color and onions are soft. Divide and serve.
