Ingredients
- 1/4 tsp cayenne pepperNutrition
- 1/4 tsp ground black pepperNutrition
- 1 medium onionNutrition
- 10 fresh baby carrotsNutrition
- 1 cup baby spinachNutrition
- 1 tbsp extra virgin olive oilNutrition
- 6 cups chicken brothNutrition
- 8 oz thin spaghettiNutrition
- 1 tsp turmeric (ground)Nutrition
- 1 stalk medium celeryNutrition
- 3 cloves garlicNutrition
- 1 slice gingerNutrition
- 3 boneless and skinless chicken breastsNutrition
Directions
- 1Dice vegetables except spinach, then sauté in a pan with olive oil until softened.
- 2Add broth and bring to a boil. Add chicken breasts and cook at medium heat, covered, for about 20 minutes.
- 3Take chicken out and shred. Bring back to boil, add shredded chicken, spices, and pasta broken into pieces. Cook for 3 minutes.
- 4Lower heat. Add spinach and stir.
- 5Serve immediately.
