Turkey Sausage and Vegetables with Brown Rice
Pan fried turkey sausage with great sauteed vegetables, all over brown rice.

Ingredients
- 1 tsp ground basilNutrition
- 1 tsp ground oreganoNutrition
- 1 tsp rosemaryNutrition
- 4 cloves garlicNutrition
- 1 cup pieces or slices fresh mushroomsNutrition
- 12 oz turkey sausageNutrition
- 1 cup chopped onionNutrition
- 1 can tomatoes, dicedNutrition
- 2 tbsps tomato pasteNutrition
- 1 cup chopped red pepperNutrition
- 3 cups brown riceNutrition
Directions
- 1Brown sausage in fry pan. No need for added fat.
- 2Remove sausage links and slice.
- 3Add diced onion to fry pan. Sauté till transparent. Add garlic and sauté for an additional minute or two. Return sliced turkey sausage to fry pan.
- 4Add diced red pepper and sliced fresh mushrooms. Sauté till vegetables soften.
- 5Add canned diced tomatoes. Cook till mixture comes to a boil.
- 6Add tomato paste to thicken. Add dried herbs.
- 7Reduce heat. Simmer for about an hour.
- 8Cook the brown rice. Serve turkey and tomatoes over rice.
