Chicken Florentine

Ingredients
- 1 cup shredded sharp cheddar cheeseNutrition
- 1 cup sour creamNutrition
- 8 tbsps parmesan cheeseNutrition
- 1 tsp curry powderNutrition
- 3 breasts, bone and skin removed chicken breastNutrition
- 1 cup mayonnaiseNutrition
- 2 cans cream of mushroom soupNutrition
- 3 wedges yield lemon juiceNutrition
- 2 packages spinachNutrition
- 2 1/2 fl oz white wineNutrition
- 1/2 cup breadcrumbsNutrition
Directions
- 1Cook and drain the spinach; set aside.
- 2In a large bowl, mix together the soup, mayonnaise, sour cream, cheddar, wine, lemon juice, curry powder, and salt and pepper to taste.
- 3Spread the chicken (cooked) in a greased 13x9" casserole. Cover chicken with spinach, then pour the soup mixture over the spinach.
- 4Combine the parmesan and breadcrumbs and sprinkle over casserole.
- 5Bake at 350 °F (175 °C) for 30 minutes.
