  1. 1Preheat oven to 375°F (200° C). Rinse chicken breasts and pat dry with paper towels. Lightly spray a baking dish with butter-flavored cooking spray.
  2. 2Sprinkle chicken breasts with salt and pepper. Place in a single layer in prepared dish.
  3. 3Arrange apple slices over and around chicken breasts. Sprinkle with shallot and thyme leaves. Pour on balsamic vinegar.
  4. 4Bake for 15-20 minutes, until chicken is opaque throughout. Cut to test.
  5. 5Arranged cooked chicken on platter and spoon apples and cooking juices on top. Garnish with thyme sprigs, if you'd like. Serve immediately.
