Apple and Thyme Chicken

- 1Preheat oven to 375°F (200° C). Rinse chicken breasts and pat dry with paper towels. Lightly spray a baking dish with butter-flavored cooking spray.
- 2Sprinkle chicken breasts with salt and pepper. Place in a single layer in prepared dish.
- 3Arrange apple slices over and around chicken breasts. Sprinkle with shallot and thyme leaves. Pour on balsamic vinegar.
- 4Bake for 15-20 minutes, until chicken is opaque throughout. Cut to test.
- 5Arranged cooked chicken on platter and spoon apples and cooking juices on top. Garnish with thyme sprigs, if you'd like. Serve immediately.
