Bacon and Potato Soup
A great, very flavorful soup for all year round.

Ingredients
- 0.12 tsp cayenne pepperNutrition
- 1/2 tsp saltNutrition
- 1 1/2 tsps olive oilNutrition
- 4 cups chicken broth, fat freeNutrition
- 6 medium slices center cut baconNutrition
- 1/2 cup chopped carrotsNutrition
- 1/2 cup chopped onionNutrition
- 4 medium red potatoesNutrition
- 4 oz shredded cheddar cheese, fat freeNutrition
Directions
- 1Cook bacon until crisp. Remove and drain on paper towels.
- 2Chop all the vegetables.
- 3Add olive oil to the pan and add onion, carrot and celery as they are cut up. Sauté until onion is soft but not brown, about 3 to 4 minutes.
- 4Stir in chicken broth, potatoes and pepper. Bring to boil, reduce heat and simmer covered until potatoes are tender, about 10 to15 minutes.
- 5Stir in cheese and heat until just melted - do not boil. Chop bacon and add to soup.
- 6Adjust seasoning to taste by adding salt if desired. Serve at once.
