Roasted Cauliflower with Parmesan and Almonds

- 1Pre-heat oven to 400° F (200° C).
- 2Cover roasting pan with foil and spray with olive oil cooking spray.
- 3Steam cauliflower for about 5 minutes until crisp-tender. Transfer cauliflower to roasting pan.
- 4Stir together raisins, breadcrumbs, parmesan, almonds and oil in a medium bowl.
- 5Sprinkle breadcrumb mixture over cauliflower.
- 6Roast until crumbs are toasted, about 20 minutes.
- 7Drizzle lemon juice over top and roast 5 minutes longer.
- 8Serve hot or at room temperature.
