Roasted Cauliflower with Parmesan and Almonds

  1. 1Pre-heat oven to 400° F (200° C).
  2. 2Cover roasting pan with foil and spray with olive oil cooking spray.
  3. 3Steam cauliflower for about 5 minutes until crisp-tender. Transfer cauliflower to roasting pan.
  4. 4Stir together raisins, breadcrumbs, parmesan, almonds and oil in a medium bowl.
  5. 5Sprinkle breadcrumb mixture over cauliflower.
  6. 6Roast until crumbs are toasted, about 20 minutes.
  7. 7Drizzle lemon juice over top and roast 5 minutes longer.
  8. 8Serve hot or at room temperature.
