Directions

  1. 1Drain and rinse black beans. Drain corn and combine in a medium-large bowl.
  2. 2Add olive oil and lime juice.
  3. 3Chop onions and cilantro and combine with beans and corn. Cook couscous while chopping.
  4. 4Add salt, black pepper, red pepper and cumin.
  5. 5Stir in cooked couscous a small amount at a time.
