Spiced Chicken Couscous with Vegetables

Ingredients
- 0.12 tsp ground mixed spiceNutrition
- 0.12 tsp spray oilNutrition
- 1 wedge or slice lemonNutrition
- 3 1/2 oz chicken breast, finely slicedNutrition
- 2 1/2 oz chicken stockNutrition
- 3 1/2 oz vegetable stockNutrition
- 1/4 cup green beans, halvedNutrition
- 1 small courgette (zucchini), slicedNutrition
- 0.12 tsp brownulated brown sugarNutrition
- 2 oz couscousNutrition
Directions
- 1Combine the spice and sugar, add the chicken and toss until well coated.
- 2Spray a non-stick frying pan lightly with oil and when hot, add the chicken. Stir-fry over medium-high heat for 5-8 minutes or until golden brown and cooked through.
- 3Stir in the chicken stock, beans and courgette and bubble gently for 1-2 minutes.
- 4Meanwhile, put the couscous into a small saucepan and pour the hot vegetable stock over. Stir and heat gently until the stock has been absorbed.
- 5Serve the chicken on the couscous with the lemon wedge to squeeze over.
