Ingredients
- 2 tbsps cuminNutrition
- 1 1/2 tsps ground oreganoNutrition
- 1/4 tsp cayenne pepperNutrition
- 1 dash saltNutrition
- 1 tbsp olive oilNutrition
- 1 chicken, bone and skin removed chickenNutrition
- 1 cup salsaNutrition
- 6 cups chicken stockNutrition
- 2 cloves garlic, mincedNutrition
- 2 medium onions, choppedNutrition
- 2 chili peppers, dicedNutrition
- 2 jalapeno peppers, dicedNutrition
- 16 oz great northern beansNutrition
Directions
- 1Simmer beans, half the onions, and half the garlic for 2 hours in the chicken stock or until the beans soften, stirring frequently.
- 2Add chicken and salsa.
- 3Sauté pepper, spices, and the remaining onions and garlic in the oil and add to the chili.
- 4Simmer for one more hour.
- 5Garnish with sour cream, Monterey Jack cheese and fresh chopped cilantro.
