White Chili Chicken

Ingredients
- 1/4 cup shredded cheeseNutrition
- 1 cup Italian tomatoesNutrition
- 12 oz canned chicken breastNutrition
- 2 cups fat free low sodium chicken brothNutrition
- 3 tsps chili powderNutrition
- 1 cup seasoned recipe pinto beansNutrition
- 2 tsps ground oreganoNutrition
- 1 tsp olive oilNutrition
- 2 cloves garlicNutrition
- 1/2 medium white onionNutrition
- 1/4 medium green pepperNutrition
- 1/2 medium red pepperNutrition
Directions
- 1Pour the chicken (mostly drained), broth, diced tomatoes, and undrained pinto beans into a large sauce pan and simmer.
- 2Meanwhile heat up a medium skillet with a teaspoon of olive oil.
- 3Sauté the garlic, onion, red pepper and green pepper until soft, about 2-4 minutes.
- 4Pour sauteed vegetable mixture into soup mixture along with chili powder and oregano.
- 5Simmer 10-30 minutes (longer the better, but still will be good in 10 minutes).
- 6Ladle out the soup and sprinkle with cheese.
- 7Optional: a couple teaspoons of cilantro also taste amazing in this chili. Some cayenne pepper will give an extra kick too.
