Mock Bread
A low carb "bread" that's more like an egg souffle.

- 1Pre-heat oven to 300 °F (150 °C).
- 2Oil a small loaf pan with vegetable oil, butter or pan spray.
- 3Beat the egg whites with an electric mixer until frothy. Add the cream of tartar and beat until stiff peaks form, but the whites are still moist.
- 4Combine the egg yolks, cottage cheese, soy flour, and sweetener and fold into the egg whites. Add cinnamon. Do not over mix.
- 5Pour the mixture into the prepared pan and bake in the preheated oven for about 40 to 45 minutes, or until the loaf is lightly browned and springs back when touched with a finger.
