Directions
- 1Rinse and sort dried peas in a colander.
- 2In a large soup pot, heat olive oil and sauté onion until softened.
- 3Add water, peas, carrots, and cover.
- 4Heat to boiling, and boil rapidly for 30 minutes.
- 5Add ham, and reduce heat and simmer for 30 minutes more, stirring occasionally.
- 6Season with salt and pepper before serving.
