  1. 1Rinse and sort dried peas in a colander.
  2. 2In a large soup pot, heat olive oil and sauté onion until softened.
  3. 3Add water, peas, carrots, and cover.
  4. 4Heat to boiling, and boil rapidly for 30 minutes.
  5. 5Add ham, and reduce heat and simmer for 30 minutes more, stirring occasionally.
  6. 6Season with salt and pepper before serving.
