  1. 1Bring split peas and water to a bowl, strain and rinse.
  2. 2Return peas and 8 cups water to the pot and bring to a bowl once again.
  3. 3Lower heat and simmer for two hours, stirring occasionally. Add water if necessary and to preference. If you like thicker soup, let some of the water simmer off.
  4. 4Add seasonings, chopped onion towards the last 15/20 minutes of cooking.
