White Chicken Chili
A quick and easy meal that's a nice change from beef chili.

Ingredients
- 1 tsp ground cuminNutrition
- 1/2 tsp cayenne pepperNutrition
- 1 tbsp olive oilNutrition
- 3 breasts, bone and skin removed chicken breastNutrition
- 1/4 cup cilantroNutrition
- 14 1/2 oz chicken broth, low sodiumNutrition
- 1 small onion, choppedNutrition
- 2 cups cannellini beansNutrition
- 4 oz green chiliesNutrition
- 4 oz reduced fat pepper jack cheese, shreddedNutrition
Directions
- 1Cook chicken and onion in olive oil until chicken is cooked through.
- 2Stir in beans, broth, chilies, cumin and cayenne pepper.
- 3Bring to boil. Reduce heat to medium-low and simmer for about 15 - 20 minutes.
- 4Serve topped with shredded cheese and cilantro.
- 5Enjoy!
