Oat Bran Carrot Muffins

Ingredients
- 1 large eggNutrition
- 3/4 cup milk, nonfatNutrition
- 1 tsp cinnamonNutrition
- 1 tsp gingerNutrition
- 1/4 tsp nutmegNutrition
- 1/2 tsp saltNutrition
- 3/4 cup applesauceNutrition
- 1 cup grated carrotNutrition
- 2 tsps baking sodaNutrition
- 10 servings 1 packet splendaNutrition
- 1 cup oat branNutrition
- 3/4 cup flourNutrition
Directions
- 1Combine dry ingredients in large mixing bowl. Stir in grated carrot to coat, breaking up lumps.
- 2Beat egg and combine with milk and applesauce.
- 3Add wet ingredients to dry and mix just until combined.
- 4Bake in paper cups at 400 degrees F for 20-25 minutes.
- 5Makes 6 large muffins or 12 small muffins.
- 6Note: Splenda packets can be substituted with 1/4 to 1/2 cup of granulated sweetener.
