  1. 1Melt the butter on low to medium heat.
  2. 2When the butter is completely melted, add the flour and make sure there are no lumps.
  3. 3Add the milk and let it come to a boil at low heat. Stir often.
  4. 4Chop the chicken to small bite size pieces.
  5. 5Add the mozzarella and let it melt, keep on a low heat until the cheese is no longer "stringy".
  6. 6Add the chopped chicken and the parmesan cheese, and stir it in.
  7. 7Serve with pasta and a salad.
