Chicken in Bechamel Sauce

- 1Melt the butter on low to medium heat.
- 2When the butter is completely melted, add the flour and make sure there are no lumps.
- 3Add the milk and let it come to a boil at low heat. Stir often.
- 4Chop the chicken to small bite size pieces.
- 5Add the mozzarella and let it melt, keep on a low heat until the cheese is no longer "stringy".
- 6Add the chopped chicken and the parmesan cheese, and stir it in.
- 7Serve with pasta and a salad.
