  1. 1Cut up the chicken and stir-fry until no longer pink; set aside.
  2. 2Finely chop the green onions (including green stems) and set aside.
  3. 3Scramble the eggs in a small skillet and set aside.
  4. 4Bring the chicken broth to a boil in a large skillet.
  5. 5Add the soy sauce, garlic and rice.
  6. 6Stir, cover and reduce heat. Simmer for 20 minutes.
  7. 7Quickly add the chicken, peas and carrots, and egg to the rice.
  8. 8Cover for another 10 minutes or until the rice is cooked and soft.
