Ingredients
- 1/3 second spray butter cooking sprayNutrition
- 2 tbsps soy sauceNutrition
- 16 oz boneless skinless chicken breastNutrition
- 4 large eggsNutrition
- 1 tsp minced garlicNutrition
- 4 cups chicken stockNutrition
- 2 stalks green onionsNutrition
- 1 cup frozen peas and carrots, thawedNutrition
- 2 cups long grain white riceNutrition
Directions
- 1Cut up the chicken and stir-fry until no longer pink; set aside.
- 2Finely chop the green onions (including green stems) and set aside.
- 3Scramble the eggs in a small skillet and set aside.
- 4Bring the chicken broth to a boil in a large skillet.
- 5Add the soy sauce, garlic and rice.
- 6Stir, cover and reduce heat. Simmer for 20 minutes.
- 7Quickly add the chicken, peas and carrots, and egg to the rice.
- 8Cover for another 10 minutes or until the rice is cooked and soft.
