Bean Salad
A tasty bean salad that's great for a barbecue.

Ingredients
- 1 dash pepper, to tasteNutrition
- 1 dash salt, to tasteNutrition
- 2 tbsps vinegarNutrition
- 1/4 cup canola oilNutrition
- 1/4 cup cilantro, choppedNutrition
- 1 cup corn kernelsNutrition
- 1 clove garlic, crushedNutrition
- 1/2 cup chopped green onionsNutrition
- 1 cup black beans, drainedNutrition
- 1 cup canned kidney beans, drainedNutrition
- 1 tbsp honeyNutrition
- 1/2 cup cooked pearl barleyNutrition
- 1/2 cup cooked brown riceNutrition
- 20 g sunflower seedsNutrition
Directions
- 1In a large bowl, combine the cooked barley, rice, black beans, kidney beans, corn, onions, red bell pepper and cilantro. Mix well.
- 2To make dressing in a small bowl, whisk together oil, vinegar, honey, garlic, salt and black pepper. Pour over salad and toss well.
