Directions

  1. 1Spray the saucepan with oil spray and gently fry the onions and garlic until they turn slightly brown.
  2. 2Add the chillies and fry for another 30 seconds.
  3. 3Add the carrots, sweet potato and stock. Bring to the boil and leave to simmer for 20 minutes or until the vegetables are tender.
  4. 4Liquidize the soup and return to the pan.
  5. 5Season to taste and serve.
