Sweet Potato and Chilli Soup

Ingredients
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1 tbsp vegetable oil sprayNutrition
- 6 cubes vegetable stockNutrition
- 2 cloves garlic, choppedNutrition
- 500 g carrots, choppedNutrition
- 2 large onions, chopped roughlyNutrition
- 2 chili peppers, deseeded and choppedNutrition
- 4 cups waterNutrition
- 500 g sweet potatoes, choppedNutrition
Directions
- 1Spray the saucepan with oil spray and gently fry the onions and garlic until they turn slightly brown.
- 2Add the chillies and fry for another 30 seconds.
- 3Add the carrots, sweet potato and stock. Bring to the boil and leave to simmer for 20 minutes or until the vegetables are tender.
- 4Liquidize the soup and return to the pan.
- 5Season to taste and serve.
