Turkey Vegetable Loaf

For lovers of vegetables, this is great for dinner or in a sandwich for lunch.

  1. 1Sauté garlic, onion, mushrooms, oil in frying pan. When onions are transparent remove from heat and set aside.
  2. 2Thaw and drain spinach.
  3. 3In mixing bowl, add spinach, turkey, carrots, egg whites, and all other ingredients. Add sauté mixture as well.
  4. 4Mix gently as you don't want to over mix it.
  5. 5Use a non-stick spray and coat pan lightly, add turkey vegetables loaf mixture. This may take 2 loaf pans or use a casserole dish.
  6. 6Bake at 350 °F (175 °C) for 1 hour.
  7. 7Top the loaf with your favorite topping or just leave plain.
