Turkey Vegetable Loaf
For lovers of vegetables, this is great for dinner or in a sandwich for lunch.

Ingredients
- 8 oz feta cheeseNutrition
- 6 tbsps parmesan cheeseNutrition
- 1/2 cup egg beatersNutrition
- 1 tsp pepperNutrition
- 3 tbsps olive oilNutrition
- 2 lbs ground turkeyNutrition
- 2 cups grated carrotsNutrition
- 2 tsps garlicNutrition
- 1 cup pieces or slices mushroomsNutrition
- 1 cup chopped onionsNutrition
- 1 cup spinachNutrition
- 1 cup bread crumbsNutrition
Directions
- 1Sauté garlic, onion, mushrooms, oil in frying pan. When onions are transparent remove from heat and set aside.
- 2Thaw and drain spinach.
- 3In mixing bowl, add spinach, turkey, carrots, egg whites, and all other ingredients. Add sauté mixture as well.
- 4Mix gently as you don't want to over mix it.
- 5Use a non-stick spray and coat pan lightly, add turkey vegetables loaf mixture. This may take 2 loaf pans or use a casserole dish.
- 6Bake at 350 °F (175 °C) for 1 hour.
- 7Top the loaf with your favorite topping or just leave plain.
