Ingredients
- 1/4 cup Dijon mustardNutrition
- 1 kiwi fruit, dicedNutrition
- 12 oz jumbo pasta shellsNutrition
- 4 oz salted cashewsNutrition
- 2 1/2 cups cooked chicken, dicedNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1/2 cup mango, slicedNutrition
- 1/2 cup pineapple, dicedNutrition
- 1 oz shallots, choppedNutrition
- 1/3 cup mayonnaiseNutrition
Directions
- 1In a large bowl add chicken, shallots, mayonnaise, mustard and cashews, stir until well combined.
- 2Gently mix in the fruit and season with salt and pepper.
- 3Cook, drain and cool jumbo pasta shells.
- 4Spoon 2 tablespoons of chicken salad mixture into pasta shells.
- 5Refrigerate until serving.
