  1. 1In a large bowl add chicken, shallots, mayonnaise, mustard and cashews, stir until well combined.
  2. 2Gently mix in the fruit and season with salt and pepper.
  3. 3Cook, drain and cool jumbo pasta shells.
  4. 4Spoon 2 tablespoons of chicken salad mixture into pasta shells.
  5. 5Refrigerate until serving.
