Pizza Soup

Ingredients
- 1/4 tsp crushed red pepperNutrition
- 1/2 cup sliced olivesNutrition
- 4 oz sliced pepperoniNutrition
- 1/2 cup diced tomatoesNutrition
- 1/3 cup dry white riceNutrition
- 16 oz pizza sauceNutrition
- 1/2 cup grated parmesan cheeseNutrition
- 4 oz shredded provolone cheeseNutrition
- 1 tsp leaves basilNutrition
- 1 tsp leaves oreganoNutrition
- 2 tbsps olive oilNutrition
- 4 cups chicken brothNutrition
- 1 clove garlic, mincedNutrition
- 1/2 cup pieces or slices mushroomsNutrition
- 1 medium onion, choppedNutrition
- 1 medium green pepper, choppedNutrition
Directions
- 1In large saucepan heat the olive oil.
- 2Saute the onion and green pepper until softened. Stir in the garlic. Cook for a minute.
- 3Add oregano, basil, crushed red pepper, rice, tomatoes, pizza sauce and broth.
- 4Bring to boil. Lower heat to a simmer and cover. Cook for 20 minutes or until rice is tender.
- 5Stir in the pepperoni, olives and mushrooms. Cook for another minute or two.
- 6Serve the soup in individual bowls with a sprinkling of provolone and parmesan cheese.
