  1. 1Preheat oven to 400 °F (200 °C).
  2. 2Peel eggplant and cut into about 1/2" thick rounds.
  3. 3Brush both sides of eggplant with olive oil and sprinkle with salt, pepper, and garlic powder.
  4. 4Put eggplant slice in oven for 7 minutes or until browned and tender.
  5. 5Top eggplant with pasta sauce (sugar free if available) and mozzarella cheese (and any other topping you might like that is diet friendly).
  6. 6Continue to bake eggplant pizzas until the cheese is melted. Serve.
  7. 7Note: good for South Beach Phase 1.
