Directions
- 1Preheat oven to 400 °F (200 °C).
- 2Peel eggplant and cut into about 1/2" thick rounds.
- 3Brush both sides of eggplant with olive oil and sprinkle with salt, pepper, and garlic powder.
- 4Put eggplant slice in oven for 7 minutes or until browned and tender.
- 5Top eggplant with pasta sauce (sugar free if available) and mozzarella cheese (and any other topping you might like that is diet friendly).
- 6Continue to bake eggplant pizzas until the cheese is melted. Serve.
- 7Note: good for South Beach Phase 1.
